Chipilin Tamales

Ingredients

1 kilogram of Corn masa

250 grams of Cream cheese

250 grams of Mozzarella cheese, in small pieces

2 Garlic cloves

250 grams of Melted lard

450 grams of Bunch of chipilín

Huerta leaves

1 pinch of Salt

Preparation

Step 1 : To prepare these chipilín tamales, start by blending the 450 grams of chipilín and the 2 garlic cloves with a little water.

Step 2 : Then prepare the masa by mixing the blended chipilín with the cream cheese and melted lard, and knead very well.

Step 3 : Add salt to taste and let the masa rest.

Step 4 : To soften the huerta leaves, place them in a pot with water over low heat for 5 minutes.

Step 5 : Then cut the leaves into squares and add a large tablespoon of the chipilín masa mixture to each leaf.

Step 6 : Add two pieces of mozzarella cheese and wrap with the same huerta leaf to form the tamales.

Step 7 : In a pot, place huerta leaves at the bottom and place the tamales on top, adding enough water.

Step 8 : Add another layer of huerta leaves on top and cover the pot.

Step 9 : Cook the tamales for approximately one hour until cooked, then serve hot.
