Escabeche
Ingredients
½ Shredded white cabbage
2 Grated carrots
1 Diced onion
½ cup of White vinegar
¼ cup of Water
¼ cup of Vegetable oil
2 Minced garlic cloves
1 teaspoon of Dried oregano
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a large bowl, mix the shredded cabbage, grated carrots, and diced onion.
Step 2 : In a small pot, it's important to combine the white vinegar, water, vegetable oil, minced garlic, dried oregano, salt, and pepper, then bring to a boil over medium-high heat.
Step 3 : Once the vinegar mixture is hot, pour it over the cabbage and carrot mixture.
Step 4 : It's essential to mix well to ensure everything is covered by the vinegar.
Step 5 : Cover the mixture and let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
Step 6 : Before serving, mix the escabeche and drain any excess liquid.
