Pito Cakes
Ingredients
2 Bunches of pito
4 Eggs
Oil
1 pinch of Salt
Preparation
Step 1 : Clean the pitos, removing what they have inside the flower.
Step 2 : Then, wash them and bring to a boil.
Step 3 : Once boiled, drain and set aside.
Step 4 : Beat the egg whites until stiff peaks form, add the yolks and continue beating.
Step 5 : Next, mix the drained pitos with the beaten egg and add salt to taste.
Step 6 : In a pan, add a drizzle of oil and with a large spoon, add a spoonful of the mixture to the oil and let it brown.
Step 7 : Then, flip the cake and let it brown on the other side.
Step 8 : Drain and repeat the same process until the mixture is finished.
Step 9 : Serve with tomato sauce and accompany with rice and salad, or with boiled beans.
