Ingredients

2 Bunches of pito

4 Eggs

Oil

1 pinch of Salt

Preparation

Step 1 : Clean the pito, removing anything inside the flower.

Step 2 : Then, wash them and bring to a boil.

Step 3 : Once boiled, drain and set aside.

Step 4 : Whisk the egg whites to stiff peaks, then add the yolks and continue whisking.

Step 5 : Next, mix the drained pito with the beaten eggs and add salt to taste.

Step 6 : In a saucepan, add a splash of oil, and with a large spoon, add a spoonful of the mixture to the oil and let it golden.

Step 7 : Then, turn the cake over and let the other side golden.

Step 8 : Drain and repeat the same process until all the mixture is used.

Step 9 : Serve with tomato sauce and accompany with rice and salad, or with cooked beans.
