Riguas

3 cups of Corn kernels (half hard and half tender)

1 pinch of Salt

½ tablespoon of Sugar

15 grams of Lard or margarine

Hojas de huerta (henequen leaves)

Preparation

Step 1 : To prepare the rigua, grind the corn kernels together with the salt, sugar, and lard or margarine until you get a liquid dough of light color.

Step 2 : Then, cut the huerta leaves into pieces approximately 30 x 30 centimeters.

Step 3 : Place 2 tablespoons of the raw rigua dough in the center of each leaf, fold the leaf in half enclosing the dough, and cook on a griddle or comal over low heat for 5 minutes on each side until they harden.

Step 4 : The riguas can be enjoyed immediately to savor their maximum flavor, or left to rest for serving later, in which case they can be heated on the comal or embers.

Preparation (simple version)
