Stuffed Chili with Bean and Chorizo

Ingredients

4 Whole chilis (can be green, yellow, or red)

2 teaspoons of Oil

1 tablespoon of Finely chopped aromatic herbs

1 teaspoon of Dried oregano

2 tablespoons of Vinegar

2 Garlic cloves

¼ cup of Chopped onion

1 pinch of Salt

2 Large beef chorizos

2 tablespoons of Chopped onion

3 cups of Refried beans

150 grams of Grated cheese

¾ Thick cream

Hard grated cheese

1 pinch of Pepper

Preparation

Step 1 : In a pot, pour a cup of water and add vinegar, oil, garlic, onion, oregano, herbs, salt, and pepper.

Step 2 : Bring to a boil and add the chilis, cooking them for about five minutes until tender.

Step 3 : Remove from heat and let cool in the cooking liquid.

Step 4 : For the filling, fry the chorizo until it releases fat, remove from heat and set aside.

Step 5 : Then, in the same skillet, fry the onion and add the beans, cooking until refried.

Step 6 : Mix the beans with the chorizo.

Step 7 : Fill the chilis with the previous mixture and can be garnished with cheese and cream to taste.
