Bean Ticucos
Ingredients
1 kilogram of Corn dough
250 grams of Cooked beans
400 grams of Lard
½ Onion
1 Green chili
1 pinch of Salt
Leaves from Tamaulipas
Preparation
Step 1 : First, dice half an onion and the green chili into very small pieces, then sauté in a skillet.
Step 2 : Next, prepare the dough by adding the melted lard and kneading until achieving a smooth consistency.
Step 3 : Incorporate the sautéed onion and chili, add salt to taste, and continue kneading.
Step 4 : Then, open the leaves and place a ball of dough on each one, gently flattening to form a small tortilla.
Step 5 : Add a spoonful of beans and fold the leaf to seal, forming a small tamal or ticuc.
Step 6 : Repeat the process with the remaining dough and beans to make more tamalitos.
Step 7 : Place the tamalitos in a pot with boiling water and cook for approximately 35 minutes until cooked through.
Step 8 : They can be served with salsas or as a side to a main dish.
