Toasted Corn Atol
Ingredients
2 cups of Corn
2 cups of Milk
Cinnamon stick
8 Allspice grains
½ teaspoon of Salt
Sugar
Preparation
Step 1 : To prepare the corn atol, start toasting the corn with a part of the cinnamon on a griddle, flat iron, or pan.
Step 2 : Then take the corn to the mill to grind it.
Step 3 : In parallel, dissolve the cornmeal in 10 cups of water and strain it through a straining cloth.
Step 4 : Next, place the mixture in a pot over medium heat and add the remaining cinnamon, allspice, salt, and sugar.
Step 5 : Stir and let it boil, stirring constantly.
Step 6 : When the atol is boiling, add the two glasses of milk and wait for another boil before removing it from the heat.
Step 7 : It is important to be careful when straining the corn, avoiding adding too much water to avoid getting a too liquid consistency in the atol.
