Baked Chicken
Ingredients

1 Hen
1 cup of White wine
1 teaspoon of Mustard
1 tablespoon of Worcestershire sauce
2 Bay leaves
1 teaspoon of Sesame seeds
1 teaspoon of Maní (peanuts)
1 Thyme sprig
6 Cloves of garlic
8 Tomatoes
1 Medium onion
1 Green chili
1 Small margarine
½ Guaco chili
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The hen is marinated the night before with mustard, Worcestershire sauce, salt, pepper, three cloves of garlic, and wine.
Step 2 : The next day, roast tomatoes, onion, green chili, and three cloves of garlic.
Step 3 : Separately, toast bay leaves, thyme sprigs, maní (peanuts), sesame seeds, and guaco chili, reserving this mixture.
Step 4 : In a pot, boil the hen with three cups of water until tender.
Step 5 : Take one cup of the broth and blend it with the toasted tomatoes and spices, adjusting salt as needed.
Step 6 : Add the remaining juice and wine from the marinade to the hen and cook until it boils.
Step 7 : Once the hen is tender, transfer it to the oven at 200°C (392°F) for 20 minutes, turning and basting it with the sauce continuously.
Step 8 : Once golden, serve it separated from the sauce.
