Ingredients

4 Eggplants

½ Onion

300 grams of Mozzarella cheese

2 Cloves of garlic

2 Celery stalks

1 pinch of Salt

Preparation

Step 1 : To prepare this recipe, start by placing the eggplants in a pot with water and boiling them for 3 minutes.

Step 2 : Separately, cook the 2 celery stalks, previously washed and peeled.

Step 3 : Then finely chop the onion and garlic cloves, and sauté them in a pan with a little oil.

Step 4 : For the filling, crush the cooked celery into a puree and add it to the pan with the sautéed onion and garlic.

Step 5 : Mix well and let it cook for a few minutes over low heat, adding salt and pepper to taste.

Step 6 : Next, take the cooked eggplants, cut them in half, and fill them with the celery mixture.

Step 7 : Place the mozzarella cheese on top.
