Beans Stew with Meat

Ingredients

1 pound of Red beans soaked since the night before

2 White onion

1 Carrot

Fresh parsley

2 Red bell pepper or pimiento

Bay leaf

Thyme

½ pound of Ground meat

1 liter of Beef broth

1 teaspoon of Garlic paste

1 pinch of Black pepper

1 Tomato

Preparation

Step 1 : Red beans are cooked in a pressure cooker with salt, pepper, bay leaf, and dried thyme for approximately 15 minutes.

Step 2 : Meanwhile, chop the white onion, red bell pepper, and tomato for the base sofrito.

Step 3 : In a skillet with a little hot oil, add the chopped vegetables to make the sofrito.

Step 4 : Add garlic paste, and if desired, bay leaf and thyme to taste.

Step 5 : On one side of the skillet, cook the ground meat with a little reserved beef broth over low heat.

Step 6 : After ensuring there's no air in the pressure cooker, add the chopped carrot and remaining beef broth.

Step 7 : Cover the pot again and cook for an additional 20-30 minutes until the beans are tender.

Step 8 : Once the beans are cooked, mix them with the sofrito base and the meat, stirring to combine all ingredients.

Step 9 : Blend the leftover broth with the carrot and add it to the stew pot.

Step 10 : That's ready to be enjoyed.
