Beef Tongue Stew
Ingredients

1 kilogram of Beef tongue
1 Red bell pepper
1 Green bell pepper
1 Onion
150 grams of Cilantro
2 Garlic cloves
2 tablespoons of Achiote
Oil
1 pinch of Salt
Preparation
Step 1 : Finely chop the red bell pepper, green bell pepper, onion, cilantro, and garlic to prepare the sauté mixture.
Step 2 : Wash the beef tongue thoroughly and place it in a pressure cooker with plenty of water and salt to taste.
Step 3 : Cook for approximately 45 minutes, until very tender.
Step 4 : Set aside 2 cups of the cooking broth.
Step 5 : Once cooked, remove the beef tongue from the pot and peel off the rough skin.
Step 6 : Then, cut it into rounds.
Step 7 : In a skillet, heat oil with 2 tablespoons of achiote, add the chopped vegetables, season with salt to taste, and sauté until the onions are soft.
Step 8 : When the onions are soft, blend them together with the 2 cups of cooking broth from the tongue.
Step 9 : Pour the blended mixture into a pot, add the rounds of tongue, and cook for 25 minutes, stirring until reaching the desired consistency.
Step 10 : Serve the rounds of tongue topped with the sauce.
