Braised Beef Tongue
Ingredients
1 kilogram of Beef tongue
1 Red bell pepper
1 Green bell pepper
1 Onion
150 grams of Cilantro
2 Garlic cloves
2 tablespoons of Achiote
Oil
1 pinch of Salt
Preparation
Step 1 : Finely chop red bell pepper, green bell pepper, onion, cilantro, and garlic.
Step 2 : Thoroughly wash the beef tongue and place it in a pressure cooker with plenty of water and salt to taste.
Step 3 : Let it cook for approximately 45 minutes, until very tender.
Step 4 : Set aside 2 cups of the cooking broth.
Step 5 : Once cooked, remove the beef tongue from the pot and peel off the porous skin.
Step 6 : Then slice into rounds.
Step 7 : In a skillet, heat oil with 2 tablespoons of achiote, and add the chopped ingredients, seasoning with salt to taste and sauté until the seasonings soften.
Step 8 : When the seasonings are soft, transfer them to a blender along with the 2 cups of cooking broth from the beef tongue.
Step 9 : Add the blender mixture to a pot, then add the beef tongue rounds and let it cook for 25 minutes, stirring until you reach the desired consistency.
Step 10 : Serve the beef tongue rounds by pouring the sauce over them.
