Capeado de papas
Ingredients
6 Large potatoes boiled without peel and sliced
½ pound of Chicken breast
¼ pound of Bacon
3 cups of Fresh spinach
1 Onion sliced julienne
2 tablespoons of Chopped garlic
2 Eggs
½ cup of Cream
2 Celery stalks sliced
½ pound of Mozzarella cheese
Chicken broth
Preparation
Step 1 : In a skillet, fry the bacon until crispy, then chop it into small pieces.
Step 2 : Shred the chicken breast and set aside.
Step 3 : In another hot skillet with oil, sauté the onion and garlic, then add the spinach and shredded chicken breast.
Step 4 : Sauté everything together, adding a little chicken broth, salt, and pepper to taste.
Step 5 : On the side, mix the cream with the eggs, celery, salt, and pepper.
Step 6 : In a greased baking dish, layer potatoes, followed by cream, mozzarella cheese, and the sautéed chicken breast mixture.
Step 7 : Repeat this layering process alternating ingredients until reaching the edge of the dish.
Step 8 : Top the last layer with cheese and drizzle with olive oil.
Step 9 : Bake in a preheated oven at 350°F for 20 minutes.
