Ingredients

1 Chicken cut into pieces

1 cup of Alguashte

½ cup of Oil

2 Boiled egg yolks

1 cup of Wine

1 Garlic clove

2 Chopped onions

¼ cup of Saffron

1 Bay leaf

1 Parsley sprig

1 cup of Chicken broth

1 tablespoon of Chopped onion

1 cup of Flour

1 cup of Oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Season the chicken with salt and pepper, coat with flour, and fry in oil until golden.

Step 2 : Set the pieces aside.

Step 3 : In the remaining oil, add the onion and before it cooks or takes on another color, reintroduce the chicken pieces.

Step 4 : Add the wine and, when boiling, add the chicken broth, parsley, and bay leaf.

Step 5 : Cover and reduce the heat for one hour.

Step 6 : Mix the alguashte with boiled egg, saffron, and garlic, along with a little chicken broth, and add it to the stew, cooking for 10 minutes.

Step 7 : Remove the chicken pieces from the pot and adjust the seasoning.

Step 8 : If the sauce becomes thick, you can add more chicken broth.

Step 9 : Serve the chicken, drizzled with the sauce.
