Chiles rellenos
Ingredients
4 Green chiles
½ Medium onion
½ pound of Ground beef
¼ cup of Chopped green beans
¼ cup of Chopped carrot
¼ cup of Diced potatoes
2 tablespoons of All-purpose flour
2 Eggs
Beef consommé and pepper
Shredded oaxaca or mozzarella cheese
Preparation
Step 1 : To begin preparation, the chiles are passed through a hot skillet with oil to remove the skin and then roasted on charcoal.
Step 2 : Next, they are opened, the seeds are removed, and set aside.
Step 3 : In a saucepan, sauté the onion and add the ground beef.
Step 4 : Add the green beans, carrot, and potato in that order.
Step 5 : Once everything is cooked and soft, remove from heat and let cool.
Step 6 : Then stuff the chiles, and optionally you can add a portion of mozzarella cheese.
Step 7 : In a bowl to beat the eggs, beat two eggs to stiff peaks.
Step 8 : Add the flour and beat again to incorporate it.
Step 9 : Wrap the stuffed chiles in this mixture and fry in hot oil until golden.
Step 10 : For the sauce, blend tomato, onion, huaco chili, and bell pepper.
Step 11 : Boil the mixture for about 5 minutes, adjusting thickness according to preference.
Step 12 : You can add the chiles to the sauce or serve it on top.
Step 13 : Finally, serve the hot chiles rellenos with the sauce, white rice and enjoy.
