Garrobo en Alhuaiste
Ingredients
1 Garrobo in pieces
½ cup of Sesame seeds
2 tablespoons of Vegetable oil
1 Chopped onion
4 Chopped garlic cloves
½ Chopped green pepper
½ cup of Chicken broth
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a large skillet, toast the sesame seeds over medium heat until golden and fragrant.
Step 2 : Then, remove from heat and let cool.
Step 3 : Next, grind the sesame seeds in a spice grinder or food processor until you obtain a fine paste, reserving it for later use.
Step 4 : In a large pot, heat the vegetable oil over medium heat.
Step 5 : Add the onion, garlic, and green pepper, and sauté until the vegetables are soft and the onion is golden.
Step 6 : Then, add the garrobo pieces and cook for a few minutes until browned on both sides.
Step 7 : Add the sesame paste and chicken broth to the pot, mixing well to coat the garrobo with the sesame sauce.
Step 8 : Reduce the heat and let it simmer for about 30-40 minutes, or until the garrobo is well cooked and tender, stirring occasionally.
Step 9 : Finally, adjust the salt and pepper to taste.
Step 10 : Serve hot, accompanied by white rice and refried beans.
