Mock Tongue
Ingredients
1 kilogram of Ground beef
2 Eggs
90 grams of Soft flour
3 Cooking tomatoes
1 Onion
1 Green chili
2 Green onions
2 Dried bay leaves
Dried thyme branches
Beef broth
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To start, one of the eggs should be hard-boiled.
Step 2 : Then, place the meat in a deep bowl and add the remaining egg (raw), bay leaves, flour, thyme, and finely chopped green onion.
Step 3 : Next, mix everything and season with salt, beef broth, and pepper to taste.
Step 4 : Spread the mixture on a piece of aluminum foil and reserve to place the filling on top.
Step 5 : The filling is prepared with the vegetables cut julienne: ½ onion, ½ green chili, and the carrot, also adding in pieces the other egg already cooked (hard-boiled and chopped).
Step 6 : Once the filling has been poured over the meat mixture, proceed to roll everything with the help of the aluminum foil.
Step 7 : It is important to leave a margin for the ends of the paper to be secured by rolling them in one direction.
Step 8 : Place this roll in boiling water and let it cook for approximately an hour over medium heat.
Step 9 : For the sauce, cook the 3 tomatoes, ½ onion, and ½ green chili in a little water.
Step 10 : Then blend and strain.
Step 11 : Cook the sauce again, seasoning with salt and pepper to taste.
Step 12 : The mock tongue is served sliced into medallions and bathed with this delicious homemade sauce.
