Ingredients

4 Eggplants

½ Onion

300 grams of Mozzarella cheese

2 Garlic cloves

2 Celery sticks

1 pinch of Salt

Oil

Preparation

Step 1 : To prepare this recipe, start by placing the eggplants in a pot of water and boiling them for 3 minutes.

Step 2 : Meanwhile, cook the washed and peeled celery sticks.

Step 3 : Next, finely chop the onion and garlic, and sauté them in a pan with a little oil.

Step 4 : For the filling, mash the cooked celery into a purée and add it to the pan with the sautéed onion and garlic.

Step 5 : Stir well and let cook for a few minutes on low heat, adding salt and pepper to taste.

Step 6 : Then, take the cooked eggplants, cut them in half, and fill them with the celery mixture.

Step 7 : Place mozzarella cheese on top.

Step 8 : Put the eggplants in the oven and bake for about 8 minutes, until the cheese is gratinated.
