Ingredients

1 Large chicken, well washed, clean, and cut into pieces

1 cup of Wheat flour

3 tablespoons of Cornstarch

2 teaspoons of Paprika

1 teaspoon of Garlic powder

1 teaspoon of Ground cumin

1 teaspoon of Curry powder

1 teaspoon of Onion powder

1 teaspoon of Ground ginger

1 teaspoon of Ground black pepper

1 teaspoon of Ground red or cayenne pepper

1 cup of Wheat flour

1 teaspoon of Curry

1 teaspoon of Garlic powder

1 teaspoon of Ground cumin

1 teaspoon of Ground red or cayenne pepper

1 pinch of Salt

Preparation

Step 1 : To prepare Pollo Campero, you must start by mixing all the ingredients in a large bowl for the marinade.

Step 2 : Add water gradually until a compact paste is achieved.

Step 3 : Then, immerse the chicken in the mixture and stir to ensure it is well coated.

Step 4 : Cover with plastic wrap and let marinate in the refrigerator for 6 hours or overnight.

Step 5 : After marinating, heat oil in a deep pot over high heat and then reduce to medium heat.

Step 6 : In another bowl, mix the ingredients for the breading and coat the chicken with the prepared flour.

Step 7 : Proceed to fry the chicken for 20-25 minutes over medium heat until golden brown.
