Ingredients
1 Large chicken, well washed, cleaned, and cut into pieces
1 cup of Wheat flour
3 tablespoons of Cornstarch
2 teaspoons of Paprika
1 teaspoon of Powdered garlic
1 teaspoon of Ground cumin
1 teaspoon of Curry powder
1 teaspoon of Onion powder
1 teaspoon of Ginger powder
1 teaspoon of Black pepper powder
1 teaspoon of Red pepper or cayenne pepper powder
1 cup of Wheat flour
1 teaspoon of Curry
1 teaspoon of Powdered garlic
1 teaspoon of Ground cumin
1 teaspoon of Red pepper or cayenne pepper
1 pinch of Salt
Preparation
Step 1 : To prepare Pollo Campero, start by mixing all the ingredients in a large bowl for the marinade.
Step 2 : Add water gradually until you achieve a firm paste.
Step 3 : Then, immerse the chicken in the mixture and stir to ensure it is well coated.
Step 4 : Cover with plastic wrap and let marinate in the refrigerator for 6 hours or overnight.
Step 5 : After marinating, heat the oil in a deep pot over high heat, then reduce to medium.
Step 6 : In another bowl, mix the ingredients for the breading and pass the chicken through the prepared flour.
Step 7 : Proceed to fry the chicken for 20 to 25 minutes over medium heat until golden.
Step 8 : Once the chicken is ready, drain it in a colander and serve to taste, accompanied by rice, beans, or a fresh salad.
