Ingredients

4 ounces of Liver

4 ounces of Heart

2 Ears

4 ounces of Spleen

6 ounces of Cheek meat

4 ounces of Lungs

4 ounces of Tongue

4 ounces of Kidneys

3 Tomatoes

Pork lard

1 Green chili

1 Onion

2 Garlic

Meat broth

1 Bunch of mint

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The offal is boiled in boiling water until tender, which takes approximately an hour.

Step 2 : Once cooked, it is chopped into small pieces.

Step 3 : In a skillet, sauté the tomatoes, green chili, onion, garlic, and mint for 10 minutes.

Step 4 : Then, add the chopped offal to the skillet and cook over medium heat for 15 minutes, making sure to mix well with the vegetables.

Step 5 : The fritada is served accompanied by rice and toasted tortillas, or as a side to other typical Salvadoran dishes.
