Potato Stuffed Cakes

Ingredients

4 Large potatoes

½ pound of Mozzarella cheese

2 Eggs

1 tablespoon of Flour

Water

Oil

1 pinch of Salt

¼ Chopped onion

Chopped green chili

1 pinch of Pepper

Preparation

Step 1 : Peel the potatoes and cut them into not very thick slices.

Step 2 : Bring water to a boil in a pot and add the potato slices, cooking them until they start to soften, without letting them cook completely.

Step 3 : Remove from heat and place on a plate to cool, reserving the water.

Step 4 : While the potatoes cool, mix the cheese, chopped onion, and chili.

Step 5 : With the cheese and cold potatoes, prepare the fillings, placing a bit of cheese between two potato slices, forming a sandwich.

Step 6 : Heat enough oil in a pan to fry.

Step 7 : Separate the egg yolks from the whites, whipping the whites until stiff peaks form and then incorporating the yolks and flour.

Step 8 : Carefully, coat the potato sandwiches in the egg mixture and fry until golden brown on both sides.

Step 9 : Once golden brown, remove from the pan and place on paper towels to remove excess oil.

Step 10 : Set aside this step.

Step 11 : The reserved potato water is used to make a homemade sauce.

Step 12 : When boiling, carefully add the fillings and let cook for 5 minutes until it boils again.

Step 13 : Then remove from heat and they are ready to enjoy.
