Water
Oil
1 pinch of Salt
¼ Chopped onion
Chopped green chili
1 pinch of Pepper
Preparation
Step 1 : Peel the potatoes and cut them into not too thick slices.
Step 2 : Bring water to a boil in a pot and add the potato slices, cooking them until they start to soften, but not fully cooked.
Step 3 : Remove from heat and place them on a plate to cool, reserving the water.
Step 4 : While the potatoes are cooling, mix the cheese, chopped onion, and chili.
Step 5 : Use the cheese and cooled potatoes to prepare the fillings, placing a bit of cheese between two potato slices, forming a sandwich.
Step 6 : Heat enough oil in a skillet for frying.
Step 7 : Separate the egg yolks from the whites, whip the whites to stiff peaks, then incorporate the yolks and flour.
Step 8 : Carefully coat the potato sandwiches in the egg mixture and fry until golden on both sides.
