Rice with chipilín
Ingredients
1 Onion
1 Garlic cloves
1 Green chili
1 pound of Chicken
1 Handful of chipilín
½ pound of Rice
4 Potatoes
1 Carrot
½ pound of Green beans
Chicken broth
Cumin
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : First, chop the garlic, onion, and green chili.
Step 2 : Next, wash the chicken and place it in a medium pot with 4 cups of water.
Step 3 : Add the chopped onion, garlic, and green chili, followed by chicken powder, salt, and pepper.
Step 4 : Cover the pot and boil over medium heat for about 20 minutes.
Step 5 : Wash, peel, and cut the vegetables into medium-sized pieces, and set aside in water to prevent the potato from oxidizing.
Step 6 : Wash the rice and add it to the chicken and broth, boiling for an additional 20 minutes, adding more water if necessary.
Step 7 : Strip the bunch of chipilín, removing one leaf at a time.
Step 8 : Wash the leaves and add them to the pot along with the vegetables.
Step 9 : At this point, the rice should be almost ready.
Step 10 : Add ground cumin, adjusting the salt if needed.
Step 11 : Finally, mix everything, and the rice with chipilín is ready to be enjoyed with family.
