Salvadoran Chicken Chao Mein
Ingredients
1 Chao mein noodles
1 Large onion, julienned
1 Green chili, julienned
1 Carrot, julienned
1 cup of Bean sprouts
1 Chayote squash, julienned
1 cup of Broccoli florets
1 cup of Chinese long beans
1 pound of Chicken
2 Celery stalks, chopped
2 Garlic cloves
1 pinch of Salt
Preparation
Step 1 : Start by crushing the garlic and adding it to a pot with water on the stove.
Step 2 : Place the chicken in the pot and cook, adding salt to taste.
Step 3 : Once cooked, set aside.
Step 4 : Separate half a cup of the chicken cooking water and cook the Chao Mein noodles in the remaining water until al dente.
Step 5 : Drain and cool with cold water to stop the cooking process.
Step 6 : In a saucepan with a teaspoon of oil, sauté the vegetables, celery, chili, and onion until al dente.
Step 7 : Add a cup of chicken broth and let it boil for about three minutes.
Step 8 : Then add the chicken, Chao Mein noodles, soy sauce, bean sprouts, and consommé.
Step 9 : Mix everything until all flavors are incorporated.
Step 10 : Let it cook for about three minutes and remove from heat.
