Salvadoran chilaquilas are a traditional dish full of flavor and history. They are prepared with homemade tortillas, filled with cheese and loroco, and covered with a rich, fragrant sauce.
The preparation includes steps to make the tortillas, fry them, and soak them in hot sauce. It is a dish that combines crispy textures and fresh flavors, ideal for sharing with family and savoring authentic Salvadoran cuisine.
Salvadoran Chilaquilas
Ingredients

2 cups of Corn flour
200 grams of Quesillo
Loroco flowers
4 Eggs
1 tablespoon of Chicken broth
2 tablespoons of Oil
2 tablespoons of Flour
5 Tomatoes
½ Green chile
½ Onion
2 Garlic cloves
Preparation
Step 1 : Mix the corn flour with water until forming a firm dough for making tortillas.
Step 2 : Shape a ball with the dough, wet your hands with water, and palm it to create thick, round tortillas.
Step 3 : Preheat the Double Grill and cook the tortillas for 2-3 minutes on each side, flipping them with a slanted spatula.
Step 4 : Keep the tortillas in a cloth to improve their texture the next day.
Step 5 : The next day, cut the tortillas in half with a knife and carefully open them in the center to avoid breaking.
Step 6 : Mix the quesillo or fresh cheese with chopped loroco flowers and fill each chilaquiles, reserving some for topping.
Step 7 : Beat the egg whites until almost stiff, then add the yolks and flour, and mix well.
Step 8 : Heat a pan with oil, dip the chilaquiles in the egg mixture, and fry until golden, reserving them to the side.
Step 9 : In a pot, cook water with the tomatoes, green chile, onion, and garlic for 5 minutes with the Nutri Sensor open and the valve closed.
Step 10 : Blend the mixture with additional water, adjust salt and pepper, add the chicken broth, and stir well.
Step 11 : Pour the sauce into a pot and when boiling, add the chilaquiles using tongs for 2 minutes before serving.
