Shrimp Ceviche

Ingredients

1 pound of Fresh shrimp

1 Grated carrot

1 Thin julienne green chili

1 Thin julienne red onion

1 Bunch of chopped cilantro

Oregano

6 Lemons

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The shrimp must be prepared for marinating.

Step 2 : Remove the shells, the vein, and cut them into three pieces.

Step 3 : Squeeze the lemons into a bowl and reserve the juice, being careful not to squeeze too hard to avoid releasing the oils from the lemon peel.

Step 4 : Once prepared, place the shrimp in the lemon juice for about 2 hours so they 'cook' with the lemon.

Step 5 : After this time, discard the lemon juice and add more lemon if desired.

Step 6 : Then add the other ingredients: onion, carrot, green chili, cilantro, oregano, salt, and pepper to taste.

Step 7 : Let it rest for at least 10 minutes and serve with your preferred side.
