Beef Foot Soup
Ingredients
1 Pair of beef legs
2 pounds of Beef tripe
2 liters of Water
1 Garlic head
½ pound of Annatto
Beef or chicken broth
4 Guisquil (squash); plantain or chayote can be used as alternatives
Oregano
2 Large yucas (cassava roots)
4 Corn on the cob
1 Cabbage
Cilantro
1 pinch of Salt
Preparation
Step 1 : The legs are washed with salt and lemon and divided into portions.
Step 2 : They are left to rest for 20 minutes and then washed again to remove any bad odors.
Step 3 : They can be dipped in hot water to turn white.
Step 4 : The beef stomach is washed and boiled in water to eliminate bad smell.
