Beef Tripe Soup
Ingredients
3 kilograms of Tripe (beef stomach), legs
6 Lemons
½ cup of Rice
½ Cabbage
1 can of Tomato paste
3 Small yucas
4 Pimientos (chiltomas)
10 Small malangas (ququisques)
4 Onions
Preparation
Step 1 : To prepare this delicious beef tripe soup, start by thoroughly washing the tripe with baking soda, sour oranges, and lemon.
Step 2 : Let the tripe soak for 2 hours with the peel of sour oranges inside the water, making sure to remove any strong odor.
Step 3 : Once soaked, rinse the tripe and cut it into small pieces.
Step 4 : Place it in a pot with plenty of water, add 2 pimientos, 2 onions, and a head of garlic also chopped into small pieces.
Step 5 : Cook for approximately 4 hours until tender, always ensuring there is enough water as it will be absorbed during boiling.
Step 6 : Meanwhile, soak the rice and cut the vegetables into small pieces, as well as the corn on the cob slices, keeping them in water to stay fresh.
Step 7 : Then, grind the rice with 1 pimiento, 1 onion, 1 head of garlic, and 1 tablespoon of achiote.
Step 8 : When the tripe is tender, add this mixture to the soup along with salt and lemon, and let it boil for 10 minutes.
Step 9 : Reduce the heat and add the vegetables and mint.
Step 10 : Cook on low heat until the vegetables are tender, taking care they do not fall apart.
Step 11 : Adjust the flavor with salt and lemon to your taste.
