Chicken Soup with Chipilín
Ingredients
2 Bone-in chicken breasts
4 cups of Chipilín
8 cups of Chicken broth or water
2 Medium potatoes
3 Carrots
1 Guisquil / Pipian or chayote
1 Sweet green chili or bell pepper
1 Large tomato
½ Large onion
1 tablespoon of Salt
½ tablespoon of Pepper and cumin
½ teaspoon of Oregano
1 Bay leaf
½ tablespoon of Annatto
1 tablespoon of Olive oil or vegetable oil
Preparation
Step 1 : To prepare this delicious stew, start by sautéing the chili, onion, and tomato in a little oil along with the chicken.
Step 2 : Stir everything together and add the bay leaf, garlic, annatto, oregano, pepper, and cumin.
Step 3 : Add salt and cook the chicken with the seasonings.
Step 4 : While the chicken cooks, peel and chop the potatoes, carrots, and guisquil.
Step 5 : Once the chicken is browned, add the broth and the previously chopped vegetables.
Step 6 : Let it boil until the vegetables are cooked to your liking.
Step 7 : When the vegetables are ready, add the chipilín and let it boil again so the herb cooks properly.
Step 8 : Finally, serve the stew on plates and enjoy!
