Chicken Soup with Loroco
Ingredients
1 cup of Loroco
1 Chicken
4 Garlic cloves
½ Green chili
½ Onion
2 Cilantro branches
3 Potatoes
2 Carrots
2 tablespoons of Butter
1 pinch of Salt
Preparation
Step 1 : In a pot, place the chicken with enough water and boil with a tablespoon of salt.
Step 2 : Once cooked, remove the chicken and cut into medium-sized pieces.
Step 3 : Set aside the chicken broth.
Step 4 : Finely chop the cilantro, chili, onion, and garlic, then sauté in a pan with two tablespoons of butter.
Step 5 : Cut the carrots and potatoes into medium pieces.
Step 6 : In another pot, bring to a boil the chicken pieces with the broth, gradually adding the sautéed mixture, potatoes, and carrots.
Step 7 : Add more water if necessary.
Step 8 : Once ready, add the cup of loroco, cover for two minutes, and the dish will be ready to serve.
