Ingredients

1 Packet of tomato sauce

1 pound of Gallo (rooster)

½ Bar of margarine

2 Chicken seasoning sachets

3 cups of Water

½ teaspoon of Pepper

60 grams of Chopped raisins

1 Cinnamon stick

4 Cloves

1 cup of Chicha (fermented corn drink)

Preparation

Step 1 : The rooster is washed and carefully dried, then seasoned with salt and pepper the day before.

Step 2 : The next day, it is browned in margarine, then placed in a pot with hot water to cook.

Step 3 : If necessary, more hot water can be added during cooking to ensure at least two cups of liquid at the end.

Step 4 : Once the meat is tender, a sauté is prepared with raisins, cinnamon, tomato sauce, ranchera sauce, and pepper in the fat from browning the rooster.

Step 5 : After the sauté is well fried, it is mixed with the cooked rooster and boiled for 3 minutes before adding the cloves and chicha.

Step 6 : Adjust the flavor with chicken seasoning and let it boil for at least 10 more minutes.

Step 7 : To serve, decorate the rooster with strips of canned chili peppers and pickled onions.
