Ingredients

Garrobo Soup

2 Medium-sized garrobos

1 Bunch of cilantro

4 Garlic cloves

2 Tomatoes

½ Medium onion

½ Green chili

Black pepper

Preparation (simple version)

Step 1 : Thoroughly clean the garrobos by removing their skins and washing them with vinegar or lime. Then, cut them into pieces. Garrobo Soup - Preparation - Step 1
Step 2 : In a pot, cook the garrobos with water, salt, tomato, onion, green chili, and garlic for 30 to 45 minutes until tender. Garrobo Soup - Preparation - Step 2
Step 3 : Blend part of the cooking broth with onion, chili, and garlic, and pour this mixture into the rest of the broth. Add pepper to taste. Garrobo Soup - Preparation - Step 3

Preparation

Step 1 : The first step is to properly prepare the garrobos by removing the skins and cleaning them with vinegar or lime.

Step 2 : Then, chop them into pieces.

Step 3 : In a pot, place the garrobo along with half a liter of water, salt, tomato, onion, green chili, and garlic.

Step 4 : Cook everything for 30 to 45 minutes.

Step 5 : Once the garrobo is cooked, blend part of the cooking broth along with the onion, chili, and garlic.

Step 6 : Add this mixture back into the remaining broth.

Step 7 : Add pepper to taste and serve the soup hot, garnished with chopped onion or cilantro.

Step 8 : It is recommended to serve it with toasted tortillas.
