Indian Hen Soup
Ingredients

1 Pre-marinated Indian hen
2 Juicy medium tomatoes
1 Medium onion
1 Small chili pepper
5 Peeled garlic cloves
Basil leaves
Mint, parsley, and cilantro leaves
Chiltepe chili leaves
2 Guisquiles
3 Potatoes
2 Small or medium carrots
4 Pumpkin seeds
2 Corn on the cob
¼ cup of Rice grains
1 pinch of Salt
Preparation
Step 1 : First, place the hen in a large pot and cover with enough water.
Step 2 : Add salt to taste to enhance the flavors.
Step 3 : Bring the pot to medium heat and let it cook until the meat is tender, which may take about one hour and forty-five minutes.
Step 4 : Once the hen is cooked, add the tomatoes, chili, onion, garlic, and vegetables to the same pot.
Step 5 : Then, also add the rice.
Step 6 : Continue cooking so the vegetables soften and the rice absorbs the broth, achieving a smooth and delicious texture.
