Pork and Bean Soup
Ingredients
1 pound of Pork ribs
1 pound of White beans
3 Garlic cloves
2 Small pipians
6 Tomatoes
1 Onion
¼ Well-washed, disinfected, and cut into three or four parts cabbage
1 Bay leaf
1 Thyme sprig
2 tablespoons of Ground annatto
1 teaspoon of Oregano
1 Cassava
1 Small cut calabash squash into medium cubes
1 Medium ripe banana, salt, and pepper
Preparation
Step 1 : The beans are soaked the night before to loosen their shells.
Step 2 : The next day, they are washed and scrubbed well to remove the shell.
Step 3 : In a pot with a liter of water, the beans are brought to a boil along with the cut pork ribs, half onion sliced, and the three garlic cloves.
Step 4 : When it starts boiling, add salt to taste, the bay leaf, thyme, and a pinch of oregano (saving another pinch for later).
Step 5 : Once the beans and meat are tender, remove a spoonful of beans and blend it with the tomato, annatto, and onion.
Step 6 : Then, add this mixture back into the pot with the beans and ribs.
Step 7 : When it boils again, add the vegetables and cook until tender.
Step 8 : Adjust the salt to your taste and add the remaining oregano.
