Ingredients

3 pounds of Whole fish or fish heads cut into pieces

2 Onions

5 Tomatoes

½ Garlic head

1 Bunch of aromatic herbs

3 Celery stalks

2 Leek stalk

2 pounds of Corvina fillet

3 tablespoons of Finely chopped cilantro

1 pinch of Pepper

1 pinch of Salt

Preparation

Step 1 : In a large pot with three liters of boiling water, place the whole fish or pieces along with the onions, tomatoes, garlic, and the bunch of aromatic herbs.

Step 2 : Cook on high heat for thirty minutes.

Step 3 : After that time, remove the fish and puree the mixture of onions, tomatoes, garlic, and herbs.

Step 4 : Strain the mixture and return it to the pot on the stove.

Step 5 : Add the celery stalks, leek, and fish fillets to the pot and let it boil for another ten minutes.

Step 6 : Finally, add the chopped cilantro and let it rest for five minutes before serving.
