Salvadoran Soup
Ingredients
8 Chorizo
1 Medium onion
1 Green chili
2 Peeled and chopped tomatoes
2 Bay leaves
2 cups of Chicken broth
2 Parsley leaves
1 tablespoon of Oil
2 Eggs
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Sauté the chorizo in oil over high heat with the onion, garlic, and green chili for 5 minutes.
Step 2 : Then, add the tomato and continue cooking until a sofrito is ready.
Step 3 : Pour this into a pot with the chicken broth, bay leaves, and parsley.
Step 4 : Cover the pot and cook for ten minutes over medium heat.
Step 5 : Then, simmer for approximately an hour, until it has set.
