Ingredients

White Bean Soup

1 pound of Pork ribs

1 pound of White beans

3 Garlic cloves

2 Small pipianes

6 Tomatoes

1 Onion

¼ Cabbage

1 Bay leaf

1 Thyme sprig

2 tablespoons of Ground achiote

1 teaspoon of Oregano

1 Carrot sliced into rounds

1 Small squash cut into medium cubes

1 pinch of Salt

Preparation

Step 1 : To prepare this delicious Latin American-style bean soup, start by soaking the beans overnight so they release their skins.

Step 2 : Then, drain and rinse them to remove the shells.

Step 3 : In a pot with one liter of water, bring to a boil the beans, chopped pork ribs, half an onion likewise sliced, and the 3 garlic cloves.

Step 4 : Once boiling, season with salt to taste, add the bay leaf, thyme, and oregano, reserving a pinch of the latter.

Step 5 : When the beans and meat are tender, remove a spoonful of beans and blend them with the tomato, achiote, and onion.

Step 6 : Pour the blended mixture back into the pot; this will help thicken the soup.

Step 7 : When it boils again with the sauce, add the remaining vegetables and let them soften.

Step 8 : Taste and adjust the salt if necessary.

Step 9 : Once the vegetables are soft, add the reserved pinch of dried oregano.

Step 10 : Let it simmer for a few more minutes and then turn off the heat.
